Fresh Stuffed Ravioli with Spinach and Ricotta Basil Tomato Sauce
We made a delicious and quick pasta dinner: Fresh Stuffed Ravioli using our homemade tomato sauce as a base. To enhance its flavour, we added some chopped garlic, fresh thyme, and fresh basil. If you don't have homemade sauce, you can use canned sauce and personalize it by adding your preferred ingredients. To balance the acidity in the tomato sauce, we added a little heavy cream.
We also found some mushrooms and pancetta in the fridge, which we used to make pancetta lardons and crispy mushroom bits to add texture to the pasta. Finally, we topped it off with freshly shaved parmesan cheese and some extra fresh basil. We served a Caesar salad on the side to add some greens to the meal.
