Rosti Eggs
Again, something different for breakfast from Alevia's Kitchen
Onion and red pepper Rositi with Greenfield uncured ham, free range sunny side up eggs and fresh Microgreens
The rosti (Swiss potato cake) was made with packaged dehydrated shredded potato (just add water & let sit for 10 mins). You can always use fresh potatoes (lots more work), but we had a couple of packets kicking around. Always let the rosti brown well on one side; it makes it easier to flip, or you can use the plate method if you don't feel comfortable with the freehand flip; we flip
Once ready, it's time to get the rest done. Warm your plates; it helps to keep food warm longer as you eat. Pan-fry the ham a little to take the chill off, then start your eggs. Once everything is ready, cut the Rositi and plate the rest. Can't beat something different in the mornings or for dinner if you wish, with a steak instead of ham
