Curry Chicken Salad Wrap
A quick, light dinner accompanies a bowl of hearty Homemade Canadian Pea Soup. The chicken was baked with some Asian spices, then diced up. The Curry sauce was made with some mayonnaise, sour cream, green onions & curry powder. All of this was made ahead
The fresh ingredients were sliced red grapes, julienne of carrots & sliced red onion. The vegetables, fruit and chicken were tossed with some dressing to coat the salad, and the remaining sauce was served on the side for dipping. For a little crunch, we had some toasted butternut squash seeds (we try not to waste anything). The roll was pretty basic from there, some Bibb lettuce, then the chicken salad, wrap and roll
