Asparagus | Prosciutto | Poached Egg Benny
It was a special day when we made these, a birthday for a member of 3ish Acres, but they can be done anytime. The asparagus with the prosciutto wrapped around it can be done ahead of time, even a day. We suggest blanching and peeling the asparagus before wrapping them
With everything ready, simple wrap the puff pastry around the bundle. Very easy and can be done a couple of hours ahead also. The eggs were done in the oven, with a little water in the muffin pans which work really well. Top with your Hollandaise sauce, which as usual we doctored up, and fresh tomatoes if you have them
A top ten brunch for sure!
