Alevia's Chicken Enchiladas

For something a little different than our usual style we decided to try Mexican. This is another recipe that can be made ahead for the family or for a dinner party

We added the salad which accompanied the Chicken Enchiladas really well, it cut the richness of the cheese and cream. The salad consisted of Arugula, Radicchio, Romaine and Napa Cabbage Chiffonade. The topping had Diced Pears, Apples, Radishes and Sliced Avocado topped with a Lime Dressing
